There’s a debate about whether wild salmon or farmed salmon is the better option. Farmed salmon is significantly cheaper, but it may contain less omega-3 fats and fewer vitamins and minerals, depending on whether it’s fortified or not.
Large and flavoursome, tiger prawns have moist, firm flesh and a medium flavour. They have distinctive grey, blue or black stripes that turn red when cooked. Tiger prawns are available all year round. They’re at their best from late summer to mid-autumn.
Trout is a cousin of salmon, and the two fish have a similar appearance. The taste is also somewhat similar, but trout has a milder flavor than salmon, which could be a positive or a negative depending on personal preference.

When buying fresh fish, make sure it has a mild scent and avoid anything that smells overly fishy. The eyes should be clear, and the gills should be reddish pink. If anything seems off or the fish itself looks beat up, don't bother.
The important thing to remember is when placing salmon (skin-side down) in the pan, press down so the skin evenly starts to cook, otherwise it will start to curl out of shape.
Mussels and clams are ready as soon as their shells are open wide. Have a big bowl next to your cooking pot or pan, and remove them with tongs as they finish so they don't overcook. Mussels take three to five minutes on average to cook, where clams take five to 10.

Bring a large pot of water with Old Bay seasoning to a rapid boil. Pour shrimp in boiling water and stir gently to distribute. Cook 1 -2 minutes and DO NOT let water come back to a boil. Drain immediately in a colander. Sprinkle with sea salt and more Old Bay if desired. You can also ice down shrimp to stop them from cooking.
